Shouldn’t it be: “Start off slowly” ? Just sayin’.

It could be if you were just referring to how you’re starting off, but it’s really a reference to the overall pace (a version of this has been a running trope for a long time).
The inverse of how we mean it would be “start off fast” not “start off quickly.”
